Shrimp Fajitas
Ingredients:
1.5 lbs of medium shrimp
1 yellow pepper, sliced
1 orange pepper, sliced
1 small onion, sliced
1 lime
2 TBSP olive oil
3 TBSP chipotle lime seasoning
3 cloves of garlic, sliced
Tortilla shells
All the fixin's for your fajitas: sour cream, cheese, avocado, salsa, lettuce
Directions:
1. Make sure you peel all of your shrimp and use 1.5 TBSP of the seasoning, 1/2 the lime juice and 1 tsp olive oil to season the shrimp. Toss it all together so it can marinate for a little bit.
2. Heat up a large griddle pan or skillet. Add the peppers, garlic slices and onions. Season with salt and pepper and the remaining chipotle lime seasoning. Cook over medium high heat for about 6-8 minutes. You should get a little color on your vegetables before you add the shrimp to the pan.
3. Add the shrimp to your fajita pan. Turn up the heat to high. Turn a few times and your shrimp should be done in about 3-4 minutes.
4. Finish with a squeeze of the lime. Serve with your favorite fixin's.
