Strawberry Chipotle BBQ Sauce

Ingredients: 

2 TBSP canola oil
1/2 large onion, cut into a few pieces
2 cloves of garlic, smashed
1 jalapeño, seeded and chopped into a few pieces
2 dried chipotle peppers
1 cup dark rum
1.5lbs of strawberries, remove greens and cut in half. (about 1 and a half containers)
1/2 cup apple cider vinegar
1/2 cup ketchup
1/4 cup Worcestershire
1/2 cup sugar in the raw
1/3 cup molasses (heaping 1/3 cup)
1 bay leaf
1 tsp Chipotle powder
Salt and pepper

Directions: 

1. In a large pot, add the canola oil and onion.  Sauté for 5 minutes over medium heat. 

2. Add the garlic and jalapeño, cook for 2 minutes

3. Add the dried chipotle peppers, stir, and cook for 2-3 minutes

4. Off the heat, add the rum. Turn the heat back on. Bring to a simmer for 2 minutes. 

5. Add the strawberries and a little salt and pepper. Cook for 5 minutes, stirring often. 

6. Add in the rest of the ingredients: apple cider vinegar, ketchup, Worcestershire, sugar in the raw, molasses, bay leaf and chipotle powder

7. Simmer for 15 minutes or until sauce thickens and coats the back of the spoon slightly. Taste for seasoning. 

8. Blend (using a blender or immersion blender). Strain through a fine mesh sieve. 

9. Store in the fridge in an airtight container for up to 1 month.
