Bacon and Pepper Super Sweet Corn

Bacon and Pepper Super Sweet Corn
Ingredients:
5 thick cut slices of bacon, chopped
2 TBSP canola oil
2 TBSP butter
2 bags of frozen super sweet corn
Salt and Pepper
Chipotle Seasoning (about 1 TSP but depends on how much you like)
2 fresno peppers or 1 Serrano, chopped


Directions:
1. Heat a large sauté pan with 2 TBSP canola oil and the chopped bacon. Season the bacon with a little chipotle, salt and pepper.
2. Cook bacon, stirring occasionally for about 3 minutes.
3. Add the peppers and corn and add a little more seasoning. Cook over high heat for 8-9 minutes stirring often.
4. Finish with stirring in the 2 TBSP butter over low heat. Taste for seasoning and add more if needed.


The bacon was clearly the star of the show today. But, I did make Chipotle Lime Pork Chops on the grill.  These were thin cut, bone in pork chops. I seasoned them liberally with "The Modern Gourmet" Chipotle Lime seasoning blend and 1 TBSP canola oil. I kept them in the refrigerator for about 45 minutes for the flavors to set in.  Grill outdoors over high heat about 6-7 minutes per side.  Serve hot off the grill with the corn.

*This is the last bottle of Malbec in my house! I don't know what happened? I had a taste for Malbec and I couldn't fine one on the rack or in the cellar. Looks like I may have to go shopping this week.
