Fried Lobster Bites


Ingredients:
2 bags of langostino lobster tails meat (from Trader Joes frozen section) defrosted and rinsed, slightly wet
1 cup of flour
1/2 cup panko or cornmeal or fish fry mix
1 tsp salt
1 tsp garlic powder
1 tsp paprika
1 tsp onion powder
1/4 tsp cayenne
2 cups of canola oil
2 cups of peanut oil

Directions:
Heat a large dutch oven with the oil to about 350 degrees.  Toss the wet lobster meat into the flour mixture with 2 forks and coat well with flour.  Since you have a lot here, you want to fry in batches.  Heat your oven to 200 degrees and prepare a baking sheet with a wire rack. Using a spider or large fork, add the lobster meat to the hot oil.  Leave alone for a minute and then carefully toss around.  Move occasionally for about 4-5 minutes and drain onto the wire rack.  Put the first batch in the oven while you fry the other batch. When close to finishing the second batch, remove the lobster bites from the oven and move to a paper towel lined plate.  The new batch will now drain on the wire rack and keep warm in the oven.  Enjoy warm and use your favorite dipping sauce.  We just like it with a dash of Tabasco!  Enjoy!.
