Bacon and Waffles for Dinner? Why not? I made a sweet, slightly crisp bacon in the oven and served 3 pieces on top of 2 fresh waffles. Here is how...
Bacon:
Buy 1lb thick cut mesquite bacon
Preheat oven to 375 degrees
Line your cookie sheet with foil for quick cleaning later.
Get a cooling rack and place that on top of your cookie sheet. Spray both generously with cooking spray.
Lay bacon out flat and cook in oven for 15 minutes.
Take bacon out, drizzle with honey and sprinkle with brown sugar. Put back in the over for 5-8 minutes.
For waffles:
Use a basic waffles mix but add a little fresh grated nutmeg and a pinch of cinnamon to the batter. Preheat your waffle iron to medium high (or level 4 for me) so that the waffles have a little bit of texture. You don't want the waffles and bacon to be too soggy once you put the syrup on it.
Serve 2 waffles with 3 slices of bacon on top. Sprinkle with powdered sugar, spread butter on the waffles, or sprinkle with chocolate hazelnut sprinkle from The Pampered Chef but don't forget the warm syrup! Enjoy breakfast for Dinner!
