Springtime Burger and Onion Rings

Springtime Burgers and Onion Rings are on the menu tonight.  Let me just say, if you need a reliable burger that you can count on time after time, this is it!  Check it out.

Springtime Burger Ingredients:
1 pound 80/20 ground beef
4 thick slices of smoked Gouda cheese
1 cup chopped romaine lettuce
1/2 cup BBQ sauce (I used Sweet Baby Ray's)
4 large burger buns
1/2 TSP Lawry's seasoning salt
1/2 TSP pepper
1 TSP Garlic paste
1 TSP worsteschire
8 slices of bacon

Directions:
1. Combine salt, pepper, garlic and worteschire sauce in with the meat and mix gently. Form into 4 patties, cover and refrigerate for at least 1 hour so that flavors can marry and patties will stay together during cooking.
2. Chop the lettuce, slice the cheese and prepare the bacon. Heat a large dutch oven to medium heat. Cook the bacon, drain on a paper towel and reserve.
3. Preheat your outdoor grill to medium high heat. Cook the burgers for about 4-5 minutes each side. Make sure you get some good grill marks to ensure you captured that outdoor flavor.
4. Remove patties from the grill using an oven proof pan. Take the burgers inside and place in a warm oven.
5. You will now make the onion rings. When the onion rings are ready, place the cheese on the burgers and put under the broiler on HI for 2 minutes to melt the cheese.
6. But when you are ready to serve the burger, assemble bacon, lettuce, burger with cheese, bbq sauce and top of bun.

Onion Rings
Ingredients:
1 large white onion, sliced somewhat thin.
1 1/2 cup flour
1 TSP pepper
1/2 Tsp salt
1/2 tsp chili pepper
1 1/4 cup of blue moon dark beer

Directions:
1. Toss onion rings in 1/2 cup of flour on a plate.
2. In the same dutch oven that you cooked the bacon in, add about 2 cups of vegetable oil. Heat oil to 375 degrees. Check the temperature of the oil by dropping in a pinch of flour to see if it bubbles.
3. Mix the batter. Combine 1 cup of flour with the seasonings and then slowly whisk in the beer.
4. Using tongs, add about 5-6 onion rings to the batter, toss to coat. Add one onion ring at a time to the hot oil. Use tongs to flip over and make sure they don't stick together. After about 3-4 minutes the onion rings should be nice and golden brown.
5. Take onion rings out of oil and set on a paper towel-lined plate. Continue to work in batches. After you have a plate full, sprinkle a little salt on the onion rings.
6. SERVE right away!  You want these while they are still hot and crispy.

I paired this springtime meal with a Miller 64!  Even though I had to brush slushy snow off the deck and had to stand outside grilling in the rain, this burger made me think of SPRING!  Enjoy this today and all through the upcoming nice weather.
