Pantry Clean up Brownies

So, as I was doing some cleaning this morning and checking out some ingredients that I have been meaning to use, I came across a half of bag of peanut butter chips, 2 containers of baking powder and 1 cup of white chocolate. So, I just put it all together and this recipe was born. These are extremely moist brownies. They stay together once you cut them and they are truly a great treat with coffee, or of course wine! Depends on the time of day! Enjoy.
Pantry Clean up Brownies
Ingredients:
1/2 cup white chocolate
1 cup chopped walnuts
1 cup peanut butter chips
1 Stick of butter
1 cup sugar
2 eggs
1 TSP vanilla
1/4 TSP salt
1/4 TSP baking powder
1/2 cup flour
1/3 cup cocoa powder
Directions:
1. Melt the butter. Add sugar and vanilla and stir with a spoon. Beat in the 2 eggs.
2. Mix together the flour, baking powder, salt, cocoa together. Then slowly and gradually stir into the wet ingredients just until combined. Do not over mix.
3. Add the peanut butter chips and walnuts to batter.
4. Preheat oven to 350 degrees.
5. Prepare a square 8x8 pan with parchment paper. Add the brownie mix to the pan and evenly spread out making sure to push the batter in the corners.
6. Cut off the excess parchment sticking up. It will make a cleaner square of brownies for you and the parchment paper won't burn.
7. Bake in the oven for 22-25 minutes. Rotate pan once during baking for even cooking.
8. Let cool for about 30 minutes. Remove from the pan by pulling up the parchment paper. Place flat on your counter and cut into cute, small squares with a big clean knife. Spread out on a nice plate.
9. Take the white chocolate and place into a microwave save bowl. Put in the microwave for 30 seconds at a time, stirring in between each 30 seconds. You will probably need 3-4 times to get the chocolate totally melted.
10. Stir the chocolate and get a little on your spoon. Wave the spoon over the cut brownies to drizzle the white chocolate over the brownies. Enjoy right away. Make sure chocolate hardens before covering leftovers.
