February 28th 2015
Homemade Caramel
1 cup of granulated sugar
6 tbsp butter
1/2 cup whole milk
sea salt
Directions:
1. Heat sugar in a dutch oven over medium heat. Stir constantly and be patient.
2. Sugar will start to clump and then turn into an amber liquid. Keep stirring
3. Add in the butter in tbsp pads once the sugar is melted. Keep stirring and lower the heat a little. It will bubble up so be careful
4. Once the butter is totally melted, add in the milk slowly. Stir and let boil for at least a minute.
5. Take off the heat and stir in a tsp of sea salt. Let the temperature come down a bit.
6. Put parcent paper in a small glass dish about 6 X 2. Pour the caramel in and let set. After about 5 minutes you can add a little sea salt on the top for extra garnish
7. Once set for about 2 hours, take out and lay flat. Cut into candy size pieces.
8. Any extras wrap in plastic wrap and freeze.
