Kickin' Chicken Salad

Well, well, well, it has been awhile. 


Today's recipe is Kickin' Chicken Salad with bacon and egg. I am going to make this simple dinner in less than 30 minutes. Happy Tuesday





Ingredients:
5 slices of bacon, diced into small pieces
2 chicken breasts, diced into 1 inch pieces
1 roma tomato, chopped
2 eggs, hard boiled
2 scallions, chopped
3 oz of Fontina Cheese, cut into small cubes
1 head of iceberg lettuce
1-2 hearts of romaine lettuce
*Your choice of dressing. We tried Italian and Ranch today!
1 TBSP olive oil
1 TBSP Weber Grill Kickin' Chicken Seasoning


Directions:
1. Chop your bacon and render in a sauté pan for about 10 minutes over medium low heat.
2. Diced your chicken and season with 1 TBSP olive oil and 1 TBSP Kickin' Chicken seasoning.
3. Remove bacon from sauté pan and add chicken. Cook over low in the bacon fat until chicken is lightly browned and cooked through.
4. Meanwhile, chop your garnish; eggs, scallions, tomatoes, cheese, lettuce
5. Pile your salad high with all ingredients and top with your favorite dressing. This recipe will surely kick up the flavor and change your way of thinking about a chicken salad!

*This wine is a little bigger than the previous suggestion. This wine is a dark, dark color with a dark and spicy fruit aroma. You will taste blackberries, sweet oak, toasty notes, and even chocolate. You will have to take a few sips of this one to get a good feel for this complex wine.
