Chorizo Burgers and Grilled Romaine

Chorizo Burgers
Ingredients:
1lb 85/15 lean ground beef
2 links of pork chorizo, cases removed
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp fresh garlic
1 tbsp. worseteshire
BBQ sauce or Ranch dressing for topping
5 hamburger buns
5 slices of medium cheddar cheese
A few pieces of the grilled romaine lettuce before you put the dressing on it


Directions:
1. Mix all of the seasonings, meat, worseteshire, garlic together in a bowl until just combined. Do not over mix.
2. Divide meat mixture into 5 even balls. Use a large round cookie cutter or mold to make the patties nice and round. Press down with your finger tips. Refrigerate until ready to grill.
**This is when I would whip up the salad dressing
3. Prepare the grill to high heat. Place the burger patties over high heat for 3-4 minutes per side. You only flip once.
4. As you are getting to the final minute of the second side, add the cheese.  Close the lid for 1 minute to warm the cheese. Burgers are ready
5. Plate a burger on a bun with desired toppings. Add a piece of grilled romaine and enjoy!


Grilled Romaine Salad with Grapefruit Vinaigrette
Ingredients:
3/4 Grapefruit, squeezed
1 TBSP honey
salt and pepper
1 TSP red wine vinegar
4-6 dashes of tabasco
Stream in about 1/4-1/2 cup olive oil
2 Large Hearts of Romaine lettuce, keep it together


This is a simple 2 minute salad dressing. All you do is combine the grapefruit juice, vinegar, salt, pepper, tabasco and honey and then whisk in the olive oil.  After about 2-3 seconds of streaming in the olive oil taste the dressing for seasoning. You might like more or less olive oil. There is not a magic amount, use what you like.
Grill the whole Heart of Romaine on a medium grill. Turn a few times for a total of 4-5 minutes. You should see a little color and char on the lettuce. Make sure to remove before it starts wilting. You are not cooking the lettuce, you are just infusing a little flavor on the lettuce.
You will serve the whole heart of romaine on a plate. Take off the top piece or two and lay on top of your burger. After that, drizzle some of your homemade dressing on the lettuce and enjoy.
This is a great, light side dish with this flavor-packed burger. The beef and the chorizo are so juicy together that you just want more and more. The light, citrus flavor of this salad will truly have you looking at salad in a whole new light.
