Potato Burgers with Cheese

Ingredients:
1.25 lbs of 85/15 ground beef
1 TBSP fresh minced garlic
1 TBSP McCormick Hamburger Seasoning
1 TBSP McCormick Fiery 5 Pepper Seasoning
1/4 Grated onion
4 slices of Muenster cheese
4 Potato Rolls (for burger buns)
1/2 bag of Ruffles Potato Chips

Bacon Mayo Ingredients:
1/2 Cup Mayonnaise
2 slices of bacon, cut up small and rendered in a pan until crispy
1 TBSP fresh cut chives
Salt and pepper to taste

Directions:
1. Prepare your patties. I break up the meat into 4 equal sections and then I break up the garlic, onion and seasonings by 4 to make sure the patties each have the same amount of flavor. So, once you do that, mesh your meat and seasonings together and form into equal size patties. Cover and refrigerate to let set for at least 30 minutes.
2. Put the bacon in a small pan and cook over medium until the bacon pieces are crispy. Let cool
3. Prepare your bacon mayo ingredients. Whip everything together except for the bacon. Make sure it is cool before combining.
4. Put the bacon fat and bacon pieces into the mayo. Reserve and chill.
5. Heat the grill over medium-high heat. Cook burgers 4 minutes each side. You don't have to move them or touch them other than flipping once. If you grill is hot enough, 4 minutes each side will do it.
6. At the last minute of cooking the burgers, put the cheese on and close the lid.
7. To plate up your burgers, split the potato rolls, spread the bacon mayo on the bottom of the bun, then put the burger on, then top with potato chips and close the bun.

I served this with corn on the grill.  I was inspired to make the mayo actually from a corn recipe. So, if you are feeling adventurous rub your corn with butter and then spread a little bacon mayo on your corn for a true treat.

What a great, sunny Father's Day today. We enjoyed it with a nice meal by the grill.
