Turned Up Turkey Stuffed Peppers

Ingredients:
1 lb. Ground Turkey
1 cup chopped mushrooms
1 zucchini, chopped
1 red pepper, chopped
1 cup mozzarella cheese
1/2 cup parmesan cheese
1 small onion, chopped
2 TBSP olive oil
1 TBSP fresh Garlic
1 TBSP tomato paste
10 oz crushed tomatoes in a can
6 large green peppers, tops removed cleanly and ready to stuff
1/2 TBSP Joe's Stuff
1/2 TBSP garlic
1/2 TBSP Italian seasoning
salt and pepper

Directions:
1. Make sure you purchase peppers that have a good shape so that when you cut the tops off and stuff them, they stand up nice.  Preheat oven to 350 degrees. Rub inside of peppers with olive oil and season with salt and pepper.
2. Cover peppers with foil. Heat a large sauté pan with olive oil. Add the turkey and half the seasonings, breaking up your turkey quite well.
3. In the meantime, put your peppers in the oven for about 20 minutes. When the meat is browned, remove to a bowl with a slotted spoon. Add all the rest of your ingredients - EXCEPT the CHEESE - to the sauté pan. Saute for about 10 minutes, stirring often.
4. Remove the peppers from the oven. With a slotted spoon, carefully fill the pepper half way with the meat mixture. Add a little bit of cheese at the half way mark. Finish filling the peppers and then top with remainder of the cheese. Press down so it is firm.
5. Sprinkle with a dash of red pepper flakes if you desire. Put filled peppers back in the over for about 15 minutes - or until cheese is fully melted and bubbly. Serve right away!








I didn't do a pairing with this dish - because I was treated to 16 Handles Frozen Yogurt!  On some days, I think it might be a better treat than wine!  I love frozen yogurt - but never better than wine!
