Brown Butter Tilapia with Pistachios

Brown Butter Tilapia


Ingredients:
4 Tilapia fillets
1 stick of butter
1 cup of flour
salt, pepper, sage, lemon, rosemary seasoning blend
1/4 cup pistachios
1 lemon, juiced
1 TSP red pepper flakes


Directions:
1. Heat 1 TBSP butter on a large sauté pan or cast iron griddle skillet over medium high heat.
2. Season and flour the fish generously
3. Cook fish about 4 minutes each side - without moving it around. About 2 minutes in to each side you can take a fork and swirl and extra TBSP of butter on the pan around the fish fillets. This will help create a nice crust on the fish and provide some texture to the outside.
4. While the fish is cooking heat up a small sauté pan with the remaining butter. Add in red pepper flakes and when butter is melted squeeze in lemon juice. Keep warm.
5. Remove fish from pan and spoon a TBSP of butter over the fish and top with a few pistachios.


I served this fish with a simple steam broccoli with a little, salt, pepper, garlic, olive oil and 2 TBSP water.  Put all of this (except for the cheese) in a large sauté pan with a lid and steam over medium heat for 10-12 minutes. Stir occasionally. You will add the cheese towards the end of cooking - just about a minute or two before serving so the cheese can melt.
