Garlic Peel_N_Eat Shrimp with Classic Filet Mignon

Garlic Peel_N_Eat Shrimp
Ingredients:
2 lbs of large easy peel shrimp
4 peppers (jalepeno, Serrano, or Asian red chili)
2 TBSP butter
4 TBSP olive oil
10 cloves of garlic
Salt, pepper, red pepper flakes
1/2 of a lemon, juiced
2 Cap-fulls of Brandy
Parsley for garnish


Directions:
1. Poke the peppers all around with a fork. Put them in your stainless steel pan (grill safe pan). Add olive oil, butter, salt, fresh ground pepper and about 1/4 tsp red pepper flakes.  Let sit for at least an hour.
2. Slice 10 garlic cloves and add to oil.
3. Place pan on medium heat grill. Let the garlic begin to cook for at least 5 minutes. Add the shrimp and toss often for about 6-8 minutes.  At the final minute, squeeze in the lemon and drop in the brandy.  Turn up the heat and let the alcohol simmer off as you toss constantly.
4. Hit the pan with some fresh chopped parsley. Serve right away making sure you get some of the flavored oil and garlic chips on the plate!


I made a Sunday Surf-N-Turf by adding a classic Filet Mignon with this shrimp. Since the shrimp was the star of the show I made the filet really simple.  Just season your steak about an hour before hand with olive oil, a dash of chili pepper, and Weber Grill Steak seasoning.  Season generously and make sure to rub in. You will cook your filet for about 8 minutes per side over medium heat.  Don't mess with it. Only touch it twice: once to flip and once to take off. After you take it off, your steak will be medium. Let it rest for at least 5 minutes.
In terms of timing, I added the steak to the grill first. After about 5 minutes I added the pan with the oil. Then right about time to flip the steaks I added the shrimp to the pan. Perfect!


Today was a scorcher! So, I had a few refreshing Coors Light with today's meal.  What a great Sunday meal with my HUSBAND!  I love it!
