Loaded Loco Potatoes

Loaded Loco Potatoes!!!


Ingredients:
2 large potatoes
12 oz of Mexican shredded cheese
1 lb of ground short rib beef
1 bag of Fritos chips
2 green onions, chopped
4 TBSP of butter
4-5 TBSP of Sour cream for topping
2 TBSP olive oil
2 TBSP of taco seasoning
Salt and pepper


Directions:
1. Boil potatoes for about 15 minutes.
2. Preheat oven for 400 degrees
3. Put potatoes in oven for 15 minutes
4. Cook the ground beef in a skillet with 2 TBSP of taco seasoning until browned. Reserved
5. Take potatoes out of the oven and slice open. (I put them in cast iron skillets so each person has their own) Spread apart and break up the potato a little bit. Add 1 TBSP per each side of potato. Drizzle with the olive oil and season with salt and pepper.
6. Top with cheese, ground beef, green onion and put in the 400 degree for about 10 minutes.
7. When you take out the potatoes, add a little more cheese if you want, then the fritos, then add a dollop of sour cream.
Serve and enjoy a loco dinner!
