Chicken Ceasar Wrap

Chicken Caesar Wrap
Ingredients:
2 small cloves of garlic, minced
1 TSP anchovy paste
2 TBSP fresh lemon juice (1 lemon)
1 TSP Dijon
1 TSP worstechire
1 cup low fat mayo
1/4 cup parmesan, grated
1/4 cup romano cheese, grated
Pinch of red pepper flakes
salt and pepper to taste
1-2 TBSP of extra virgin olive oil to stream in dressing as you mix. Use the desired amount based on the consistency you prefer
1 tomato, chopped
1 avocado, diced
1 heart of Romaine lettuce, chopped
2 Chicken breasts
Seasoning for the chicken is garlic, red pepper, salt, pepper and Italian seasoning
6 large tortilla shells (burrito size if you can find them)
Directions:
1. Season and chop chicken into bite-sized pieces. Cook in a pan with 1 TBSP olive oil.
2. Prepare dressing using all of the ingredients up through the olive oil. Refrigerate and reserve dressing
3. Prepare a burrito shells with lettuce, tomato, avocado, chicken and then spread dressing over top. Wrap it up and enjoy!
