Jules Kabobs - Looking for a name! Read the recipe and send me suggestions.


Ingredients:
2 large chicken breasts, chopped into 1 in. cubes
2 orange peppers, chopped into cubes
1 large Vidalia onion, chopped into cubes
2 yellow summer squash, peeled and cut into thick pieces
Beer can chicken seasoning
salt and pepper
Lime juice


Sauce ingredients:
2 TBSP orange blossom honey
2 TBSP hoisin sauce
1/2 lemon, juiced
1/2 lime, juiced
1 TBSP garlic, minced
3 TBSP melted butter
1 TSP worsteshire
1 TSP tabasco
salt and pepper
*whisk ingredients together and reserve


1. Prepare kabob pieces in separate bowls. Season all the vegetables with a little salt and pepper. Season the chicken pieces with beer can chicken seasoning. Soak wooden skewers in water for at least 30 minutes
2. Thread the skewers alternating ingredients pieces and making sure they are secured
3. Juice 1/2 lime over the kabobs and cover. Take them out to the grill
4. To grill, put diagonally over the grates and cook for about 6-8 minutes on 4 sides. After you turn the kabob the first time, brush the sauce over the cooked side as soon you turn it. Keep repeating until the meat is all done.
5. Serve with any reserved sauce


I served this dish with some Zatarain's dirty rice. It was a hit!
