Mac N Cheese Bites
But first, I had to provide some afternoon appetizers.....a little chili cheese fritos and Italian sausage.
Yum!
Mac N Cheese Bites ingredients:
1 family size box of macaroni and cheese
2 cups of shredded mozzarella cheese
2 cups of sharp cheddar cheese
1/2 cup milk
1 tsp paprika
1 tsp pepper
1 stick unsalted butter
Peanut oil for frying
Breading ingredients:
2 cups of bread crumbs
1 tsp paprika
1/2 tsp chili powder
pinch of cayenne
1 tsp pepper
3 eggs
1/2 cup milk
1. Prepare macaroni noodles. Boil the noodles for about 8 minutes, drain.
2. Mix all the cheese, the cheese powder from the box, the butter and seasonings in the bowl with the hot macaroni
3. Pour the macaroni in a 9x13 pan, smash it down with a spatula to take all the air out of it. Cover with plastic wrap and freeze for 1-2 hours.
4. Spoon out some macaroni and form into tight balls with your hands. They should be in between the size of a ping pong ball and a tennis ball. As you form them into balls, place on a sheet tray. Put back in the freezer for about 2 hours.
5. Combine milk and eggs and beat together. Combine bread crumbs in another bowl with remaining seasonings.
6. Drop the macaroni and cheese ball into the eggs mixture and then into the breadcrumbs. Cover to coat.
7. Heat peanut oil to 250 degrees. Fry the macaroni n cheese balls in batches for about 4-5 minutes each. Drain on paper towel. Serve immediately.
*You can serve with Rach dressing, BBQ sauce, tabasco or whatever you like!
Wine selection for today, thank you Sean! You made a frustrating day so much better with my Pinot Noir splurge! This is double the cost of my normal bottle budget!

This wine started on a south facing mountainside which was created by ancient, uplifted basalts, volcanic eruptions and glacial deposits. This wine is complex and unique to Willamette Valley.
