Baked Fish and Mixed Vegetables
4 Tilapia Fillets
1 stick butter
1 tsp Paprika
1 TBSP "Joe's Stuff" Seasoning
Cooking Spray
1 Yellow Squash, cut in 1in slices
1 zucchini, cut in 1in slices
1 TBSP Garlic and Wine Seasoning from the Melting Pot
2 TBSP olive oil
Directions:
1. Preheat oven to 400 degrees
2. Put vegetables in a large baking dish, toss with olive oil and melting pot seasonings
3. Put in the oven for about 25 minutes, tossing at least once.
4. Put foil on a baking sheet and then spray with cooking spray. Melt 1 TBSP butter. Brush the fish on both sides with butter. Season with Joe's stuff seasoning.
5. Put the fish in the oven when the vegetables have about 12-15 minutes to go.
6. While the fish is cooking, put the remainder of the butter in a small sauce pan with paprika. Heat over medium heat until bubbly. You will keep this on low to make your clarified butter. Use this to top your fish and vegetables.
This dish is so simple and I thought it would be just ok but this was a hit. Any night I need a quick hit, this might be one of my new go tos.
Today I did not pair a wine with this dish. If I did pair a wine with thsi dish I would have chosen a Torrontes or maybe even an unoaked Chardonnay from California. The Chardonnay would be a great match because it would marry the fish with a hint of butter flavor and really make this dish.
After dinner I had a red wine.

This is a blend of Syrah, Petite Sirah, and Merlot. This is really a trio of flavor. You have a little sweet from cranberry and pomegrante, a tangy spice that would work well with BBQ food, and black cherry for a little depth of flavor and color.
