Brisket Chili

Brisket and Three Bean Chili

Ingredients:
1 pound of chopped pre-cooked, smoked brisket (I used leftovers that I froze from a previous dinner)
1 pound of 85/15 ground beef
2 cans of Chipotle baked beans
1 can of black beans
1 can of pinto beans
1 (4oz) can of chipotle diced green chilis
1 beer, I used a basic Miller 64 today
1 (28oz) chunk style canned tomatoes
4 dashes of Chipotle Tabasco sauce
splash of red wine vinegar
10 dashes of worsteshire
1 tsp of:
-chipotle powder
-salt
-salt free southwest chipotle seasoning
-chili powder
1/2 tsp cinnamon
2 tsp Smokehouse apple seasoning (McCormick)
1 jalepeno pepper, diced small
1 poblano pepper, diced small
1 yellow onion, diced
1 TBSP canola oil

Garnish options:
Sour Cream
Doritos
Your favorite melt-y cheese sauce
Green onion

Directions:
1. Add canola oil to the cast iron pot and heat over medium-high heat. Add the bite-sized brisket pieces and brown for about 5 minutes.
2. Add the ground beef and break it up.  Add all the seasoning. Let the beef brown for about 5 minutes.
3. Add the onions and peppers and let soften for about 7-9 minutes, stirring occasionally.
4. Add the beer to deglaze the brown bits. Let simmer for about 2 minutes.
5. Drain the beans. Add all the beans and the green chilis. Use a slotted spoon and add the tomatoes.
6. Stir all ingredients together. Reduce heat to medium low and cover leaving the lid a little off to the side.
7. Let simmer for about an hour. Add the Tabasco. Taste for seasoning.
8. Add a little bit of the tomato juice to get your chili to the desired consistency.
9. Serve with Doritos on the side, sour cream or even a little bit of your favorite cheese sauce on top!

This chili does go good with a nice lager beer that can stand up to the spiciness of the chili. However, I am going to give you two really great wintery, bold red wines that you can also pair with this.
Both wines are from a local shop here in Stamford called Cost Less Liquors.

Tinto means Red King. Since this is a Spanish inspired wine, it is referring to Tempranillo which is the king of Spanish wine.
40% Tempranillo, 33% Syrah, 19% Graciano, 4% Cabernet Sauvignon, 4% Tannat
