Turned Up Turkey Stuffed Peppers

Ingredients:
1 lb. Ground Turkey
1 cup chopped mushrooms
1 cubanelle pepper, chopped
1 jalepeno pepper, chopped
2 cup mozzarella cheese
1/2 cup parmesan cheese
1 small onion, chopped
2 TBSP olive oil
1 TBSP fresh Garlic
1 TBSP tomato paste
10 oz crushed tomatoes in a can
1/4 cup sweet chili sauce
6 large peppers (I used a mix of orange, yellow and red and cut them in half lengthwise)
1 TBSP Joe's Stuff
1 TBSP garlic
1 TBSP Italian seasoning
salt and pepper

Directions:
1. Preheat oven to 350 degrees. Rub inside of peppers with olive oil and season with salt and pepper. Put the peppers in the oven to start cooking them for about 20 minutes.
2. Heat a large sauté pan with olive oil. Add the turkey and half the seasonings, breaking up your turkey quite well.
3.  When the meat is browned, remove to a bowl with a slotted spoon. Add the onions, mushrooms, jalepeno and cubaelle and some of the tomatoes. Soften for about 6-8 minutes then add the rest of the ingredients.  Saute for about 10 minutes, stirring often.
4. Remove the peppers from the oven. Let cool for a few minutes and then cut in half and remove the seeds.  Add about 1 cup of cheese to the filling mixture and toss. Fill the peppers and then top with remainder of the cheese. Press down so it is firm.
5. Sprinkle with a dash of red pepper flakes if you desire. Put filled peppers back in the over for about 15 minutes - or until cheese is fully melted and bubbly. Serve right away!
