White Mint Chocolate Chip Cookies

White mint chocolate chip cookies

Ingredients:
2 1/2 cups flour
3/4 cup Brown sugar
3/4 cup white sugar
2 eggs
2 sticks of unsalted butter
1 tsp salt
1 Tbsp baking soda
2 tsp vanilla
8 oz mint chocolate chips (I use Nestle, the ones that are green and chocolate)
8 oz white chocolate chips

Directions:
1. Leave eggs and butter out for a bit and let it get to room temperature. Using a hand mixture, blend butter and Brown sugar and white sugar until smooth.
2. Add the eggs and vanilla and blend some more
3. Add the flour, sugar, and salt carefully and blend again. Don't oversize, just blend on low until all combined
4. Add the chocolate chips and a tsp of water. Blend
5. Refrigerate covered for at least 30 minutes or up to 24hours
6. Preheat oven to 350 degrees
7. Use 2 cookie sheets and make 12 cookies. You will have 6 large cookies on each sheet
8. Bake for18-22 minute or until the edges just start to turn golden brown.
