Tomato Soup and Grilled Cheese
Ingredients:
1 (28oz) can of diced tomatoes with basil
4 Roma tomatoes
2 beefsteak tomatoes
1 pint of yellow sweet tomatoes (save about 5 for garnish)
2 vine ripe tomatoes
2 onions
6 cloves of garlic
1/4 cup olive oil
4 tbsp butter
1 tsp red pepper flakes
1 tsp Italian seasoning
1 Tbsp fresh basil
1 tsp paprika
1 Tbsp tomato paste
1/2 tbsp chipotle powder
3/4 cup heavy cream
Salt and pepper to taste
1. Preheat oven to 425 degrees
2. Halve and core tomatoes. Chop onions in slices and peel and smash garlic
3. Drizzle and toss with olive oil and salt and pepper. Roast for 30 minutes
4. Put everything from roasting pan into pot.
5. Add all other ingredients except cream and blend with and immersion blender
6. Heat up over medium for at least 10 minutes
7. Stir in the cream and blend again for a few seconds.
8. Taste for seasoning and serve.
Grilled cheese in simply butter with canola oil, 2 slices of white American cheese, and Homepride wheat bread. So simple and so good!

This wine is great with any food. However, I recommend with grilled meats, Cajun style food, and even a grilled cheese sandwich!
