Mexican Steak Salad
Ingredients:
2 sirloin steaks
1/2 red onion, chopped
3 roma tomatoes, chopped
1/2 cup sharp cheddar, shredded
2 tsp minced garlic
1 cup of chipotle ranch dressing
3 Hearts of romaine, chopped
1 cup frozen corn, defrosted
1/2 of a lime, juiced
salt and pepper
1 TBSP canola oil
Chipotle pepper seasoning, garlic, paprika, chives, salt

Directions:
1. Use half the canola oil to rub the steaks. Season with chipotle, garlic, paprika, chives and salt
2. Put the remainder oil in a pan and heat to medium heat. Grill the steaks for about 4 minutes each side.  Let cool and then chop into bite-sized pieces
3. While the steak is cooking, chop your vegetables
4. Start to assemble your salad. Add all ingredients into big bowl. Toss gently and serve. 
Chipotle ranch could be bought but you can easily make your own by mixing regular ranch dressing with a dash of tabasco and the adobo sauce from the chipotle can.
