Queso Dip with Chorizo
8 oz shredded muenster cheese
8 oz shredded cheddar
2 tbsp flour
8 oz lager beer like a Miller Fortune
1 jalapeno pepper, diced
1 cubanelle pepper, diced
2 green onions, diced
1 Tbsp canola oil
1 link of chorizo, casing removed and broken up

1. Preheat oven to 425.
2. Heat a cast iron skillet with 1 tbsp canola oil. Add in the chorizo and break up. Cook over medium low for about 5 minutes
3. Add the peppers a d green onions. Cook for another 3-4 minutes
4. Add the flour. Stir and cook for about 2 minutes.
5. Add the beer slowly. Stir and let reduce for about 2 minutes
6. Stir in the cheese slowly and make sure you keep stirring to avoid clumps
7. Put the whole pan in the oven for about 10 minutes to get bubbly and just slightly brown.
Serve with tortilla chips or crusty bread.
