Crispy Bar Tacos
This super Simple Recipe tastes so good and is a great weeknight meal.
Ingredients:
2 (60z) pieces of cod fish
1/2 cup McCormick Cajun Fish Fry mix
1 tsp Chipotle powder
salt and pepper
1 bag of broccoli slaw mix (one of the best shortcuts for fish tacos)
8 soft taco shells
2 TBSP low fat Mayo
1 TBSP worsteshire sauce
1 cup of canola oil, for frying
Directions:
1. Rinse your fish.
2. Add salt and pepper and chipotle seasoning to the fry mix on a plate and stir.
3. Cut your fish into "fish stick" like pieces. Place on the plate with the fry mixture and carefully move fish around to coat.
4. Place the plate in the refrigerator for at least 20 minutes or up to an hour.
5. In a bowl, mix the broccoli slaw, mayo and worsteshire together and reserve in the fridge.
6. Heat the oil in a large pan to medium high heat. Take the fish out of the oven and fry in the oil for about 2 minutes per side.
7. Warm the tortillas in the microwave or over the stove. Assemble the tacos by adding a piece of fish with slaw on top. That's it! So fresh and yummy.
I had these fish tacos with a very fruity wine. I had a Pink Lemonade Rose Wine from a winery in the Finger Lakes region of NY. I am not sure which winery because I threw out the bottle, but it was a pretty good match for this dish. A lighter wine with a little fruit, maybe melon or strawberry flavors, would compliment this well.
