Oreo Truffles
Today's recipe is something I found on Pinterest and couldn't stop thinking about it. So, I walked over to the store on my lunch break to get the ingredients.
Oreo Truffles:
8 oz cream cheese
1 (12oz) package of white chocolate morsels
1 tsp vanilla extract
1 (15oz) package of oreos
1. Blend oreos in a food processor until fine.
2. Reserve about 2 TBSP of oreo crumbs for dusting of the top of the truffles
3. Make sure the cream cheese is softened. Combine the cream cheese with the oreo crumbs and form into balls. Place on a parchment paper lined cookie sheet. This should make about 30 truffles. Refrigerate to harden about 20 minutes.
4. Melt the white chocolate chips in 30 second increments in the microwave. Add the vanilla extract into the chocolate. Stir in between each bout.
5. Using 2 forks, toss the one truffle at a time in the melted chocolate. Lay out on a clean cookie sheet lined with parchment paper. Sprinkle with leftover crushed oreos.
6. Refrigerate to harden, about 10 minutes. Keep refrigerated and take out just 10 minutes before serving.
