Baked Huevos Rancheros - in a bundt pan!

So I had this bright idea to make everyone at work be creative and pull out their bundt pan from the back of their kitchen cabinet.  Most of us, if we have a bundt pan, probably only use it once per year.  There are so many creative things to make in a bundt pan.  Some of the things that people brought in were: pizza bread, carrot cake, pound cake, and smores monkey bread. I wanted to share my recipe with you today!

Baked Huevos Rancheros - in a bundt pan!
Ingredients:
1 package of chorizo sausage links, casings removed
8-10 flour tortillas (I used 8 because I bought the burrito size)
1 can of black beans, rinsed and drained
1/4 cup cilantro, chopped
10 oz of shredded Monterrey jack cheese
1 cup of salsa (recipe below) instead of making your own, you can use a store bought salsa verde. I like the Target brand
10 eggs
cooking spray
Sour cream and salsa for garnish

Directions: 
1. Preheat oven to 400 degrees
2. Spray your bundt pan with cooking spray
3. Remove casings from chorizo and slice into bite-sized pieces. Brown in a large pan for about 4-5 minutes per side.
4. Layer 5 tortillas around the bundt pan, allowing the tortilla to sit down in the pan and the tortilla covers most of the side of the pan.
5. Start adding your ingredients. I started with beans, cheese, chorizo, salsa, 5 eggs, cilantro and a little salt and pepper.  This was the first layer.
6. The next layer, you want to lay down one side of the tortilla so you have a large flap to pull over the top when you are done adding the next batch of ingredients.
7. Finish adding your ingredients and pull the tortilla over the top of the ingredients and spray with cooking spray.  It should lay nice and flat.
8. Bake in the oven for 30 minutes. Let rest for 10 minutes before serving or keep warm in foil for up to 2 hours.

Salsa recipe, blend in the food processor:
10 large, sweet grape tomatoes
1 jalapeno
1 can of green chiles
juice of 2 limes
salt and pepper
1 tsp red pepper
1 tsp cilantro
2 tbsp olive oil
3 cloves of garlic
