Sausage and Pepper Pasta


Ingredients:
4 links of hot italian sausage
2 yellow peppers
2 jalepeno peppers
1 onion
48 oz of plain tomato sauce
1 TBSP sugar
1 tsp red pepper flakes
1 TBSP dry italian seasoning
2 tsp fresh garlic
2 TBSP olive oil
1/4 cup red wine
1 pound box of penne pasta
Parmesan cheese for garnish
1 TBSP fresh parsley, diced small
1 TBSP fresh basil, diced small
Salt and pepper

Directions:
1. Boil water and cook penne pasta according to box directions
2.Chop your pepper and onions into 1 inch pieces. Dice your garlic
3. Add 1 TBSP olive oil to large pan and heat over medium heat. Add sausage.  Cook to get color - about 7 minutes per side
4. Remove sausage. Deglaze with wine. Add in rest of olive oil, onion and peppers to the pan. Add in italian seasoning, red pepper flakes, sugar and 1 tsp of salt. Cook for about 6-8 minutes, stirring often.
5. Add the sauce to the pan with garlic and a little salt and pepper. Add in fresh basil and parsley.Cook for about 5 minutes.
6. Add in the sausage and continue to cook for at least 5 more minutes.
7. Add in pasta and toss gently. Serve with parmesan cheese on top.

I paired this with a Tempranillo wine.
