Spanish Chicken and Chorizo with Fresh Orange
Ingredients:
1 red onion, cut into 2 inch pieces
2 links of hot spanish chorizo, cut diagonal into about 4 pieces each link
2 tsp oregano
6 chicken thighs
1 cup chicken stock
1/2 of an orange, sliced
1 russet potato, diced into 1 inch pieces, skin on
1 tsp of paprika, cumin, chili powder, garlic, salt
salt and pepper
Directions:
1. Preheat oven to 350 degrees
2. Lay the onion and potato on the bottom of a 9x13 pan
3. Pour the chicken stock in
4. Mix your spices together and rub the under side of the chicken thigh.
5. Sprinkle salt and pepper on the vegetables
5. Place the chicken thighs, skin side up on top of the onions and potatoes. Wedge the chorizo pieces in between the chicken.
6. Use the rest of the seasoning and generously coat the top of the chicken and chorizo.
7. Lay the orange slices on top
7. Bake at 350 for about 70 minutes or until chicken is cooked through. The last 10 minutes, I rubbed by chicken with a little olive oil for extra flavor.
