Mexican Street Corn
Ingredients:
Sweet corn on the cob
Mayonnaise
Cilantro, chopped fine
Chili powder
Mild gorgonzola cheese crumbles (the traditional cheese for this is Cortina but it is hard to find)
1 lime, cut in quarters
Directions:
1. Grill the corn without husks on for about 8 minutes per side about a total of 20 minutes all together
2. Spread mayonnaise on a large plate.
3. Set corn on the plate with mayonnaise and roll around.
4. Top with cheese, cilantro, chili powder and juice of a quarter of a lime.
Add more ingredients as you like. I add more each time I eat a row of the corn.
