Crispy Onion Cheeseburgers and Corn Salad



Ingredients for burger:
1 pound of 85/15 ground beef
1 tbsp worsteshire
Salt
Pepper
1 tbsp grill seasoning or smoky blend

Toppings for burger:
10 pepperoncini peppers, diced
4 slices of crispy bacon
Onion strings (store bought like the ones you use on green bean casserole)
10 oz of smoked gouda cheese
4 super soft buns

Directions:
1. Combine all of your meat ingredients and blend with you hands. Make 4 thin free-form patties and flatten them on the board. Let rest at room temperature until ready to cook.
2. I fried my bacon in a pan and I am going to use the bacon fat as my fat to sear the burgers on. I used a deep saute pan for this. Drizzle the bacon fat on a flat skillet or pancake pan and heat to medium high heat. Save that other pan.
3. Chop all of your toppings and slice the cheese.
4. Cook the burgers for about 3 minutes each side.
5. Take out of the pan ad place on a cookie sheet. Top generously with cheese and criss cross a slice of bacon on top. Place under the broiler for 2-3 minutes just to warm the bacon and melt the cheese.
6. While that is happening, quickly put a tbsp of butter in the pan you cooked your bacon in. Slice the buns and put them side down in the bacon fat and butter pan. Put over low heat and cover.
7. Take burgers out from under the broiler. Place on bun and top with peppers and onion strings.

Street Corn Salad:
1 (16oz) bag of frozen sweet corn
1 green pepper, diced
1 avocado, diced
4 garlic cloves, minced
1/2 cup of chopped cilantro
1/4 cup chopped cucumber
1 lime, juiced
1 tbsp mayonnaise
1 - 2 tsp chili powder
Salt and pepper
1 tbsp canola oil
1/2 cup queso fresco or cortija cheese, crumbled shredded

Directions:
1. Heat oil in a medium saute pan. Add pepper and garlic and cook for 2-3 minutes.
2. Add corn and some salt and pepper and a bit of chili powder
3. Cook the corn, tossing occasionally for about 6-8 minutes
4. Turn off the heat and add avocado, cilantro, cucumber, mayo. Squeeze lime in the dish. Toss and reserve.
5. Taste for seasoning. This can be served room temperature or cold. Right before serving, sprinkle with crumbled cheese and chili powder.

Just have a beer with this one! So good.....
