Grilled Sweet Potatoes with Tangy Vinaigrette
Ingredients:
2 large sweet potatoes
Olive oil for brushing
Blend the following ingredients for the vinaigrette:
2 cloves garlic
2 Tbsp dijon mustard
1 Tbsp apple cider vinegar
Dash of cinnamon
Dash of cayenne red pepper
2 Tbsp real maple syrup
2 Tbsp olive oil
Small handful of fresh parsley
Peel and cut the sweet potatoes in rounds. Grill sweet potatoes either right on the grill grates, on foil, or in a grill safe pan over high heat for about 20 minutes. Toss once or twice. You should get some dark edges and color on your sweet potatoes. That is the best. Then drizzle with a little vinaigrette and top with extra parsley if you like.
