Thai Shrimp Peanut Salad
2 bags of Power Mix lettuce (kale, spinach, etc)
Yellow tomatoes
Peanuts
Carrots
Green onion
Red onion
cucumber
Red Pepper
Peanuts, chopped
1 pound of raw shrimp, see below for cooking instructions
Dressing Ingredients:
4 TBSP Peanut Butter (creamy)
4 tsp rice wine vinegar
3-5 TBSP canola oil
1/2 lemon, juiced
2 tsp soy sauce
2 tsp honey
Shrimp Directions:
Toss shrimp in juice from 1/2 of a lemon, 2 minced garlic cloves, 1 tsp grated ginger, 1 tsp sesame oil, 2 tsp honey, 1 tsp pepper. Marinate for about 10 minutes. Then cook in a hot pan for 4-5 minutes. Cool before tossing on salad.
Enjoy with a Dry Riesling or Pinot Grigio.
