Shrimp Alfredo Pasta Bake


Ingredients:
1 pound of shrimp
1 pound box of penne or ziti rigate
1 jar of Trader Joe's alfredo sauce
1 (14.5oz) can of diced fire roasted tomatoes (also from Trader Joe's)
1/2 cup seafood stock or chicken if you can find seafood
5 tbsp butter
1/4 cup chopped parsley
3 cloves of garlic, smashed
Butter flavored cooking spray
1/4 cup shredded mozzarella
1 cup of grated parmesan
Italian seasoning
Red pepper flakes
Spice blend (garlic, paprika, chives)
Salt and pepper

Directions:
1. Preheat oven to 400 degrees.
2. Boil water for pasta. Cook according to directions. Right when the pasta is about to be done, keep a cup of pasta water in case you need to thin out your sauce.
3. Spray cookie sheet with butter spray and toss shrimp with salt, pepper, spice blend and Italian seasoning.
4. Spread shrimp flat and cook 8 minutes in the oven. Keep it on the side until you are ready to assemble. It is ok to let it cool down.
5. Heat butter and seafood stock in a saucepan with garlic over medium heat. Stir often.
6. Mix in alfredo sauce and stir in about 1 tsp of each seasoning. Add 1/4 cup parmesan.  Reduce heat to low. Stir often for about 10 minutes or at least while the pasta is cooking.
7. Drain tomatoes.
8. As soon as your pasta is done, immediately toss in 1/2 the parsley, sauce, 1/2 cup parmesan and tomatoes into hot pasta.
11. Grease a casserole dish or 2 (8 inch) cast iron skillets.
12. Lay the pasta in a flat layer, top with single layer of shrimp. Sprinkle with parsley, parmesan and mozzarella
13. Lower oven heat to 350 and bake for 10-15 minutes

The pairing for this one was interesting.
