Lamb and Beef Arayas

Ingredients:
16 oz of ground lamb / ground beef
6 pitas
1 lemon, zest and juice
1 yellow onion, diced
2 cloves of garlic, minced
1 Large bunch of parsley, chopped
3 TBSP golden raisins
2 TBSP of Baharat spice blend (included Za'atar, allspice, coriander, cardamom, cumin, garlic powder)
1 cup of Labneh Cheese
olive oil
1 cup of shredded cheddar cheese

Directions:
1. Diced the onion, chop the parsley, zest the lemon. Preheat oven to 400 degrees
2. Heat 2 TSP of olive oil in a large skillet over medium heat. Add the onion and about 1 TBSP of seasoning. Saute util the onion is translucent - about 7-10 minutes.
3. Add the raisins, garlic and salt and pepper. Cook for 1 minute.
4. Add the meat and remaining seasoning to the pan and cook over medium low heat until just browned. Turn off the heat.
5. Add the lemon zest and parsley to the meat mixture and stir.
6. Slice your pitas and carefully open them up.
7. Fill the pitas about 3/4 of the way with meat mixture, push it down carefully.
8. Divide the cheese up equally and add some cheese in with the meat. Top off each pita with remaining meat and press the sides of the pita to flatten them a bit.
9. Lay the pits flat on a sheet tray and brush the tops with olive oil. Bake for 14-16 minutes, turning once.
10. When the arayas come out of the oven, they should be crispy on both sides and savory in the middle. Serve with Labneh cheese on the side.
