Chicken Gyros

Chicken Gyros......."If you haven’t made this Greek favorite already, just go ahead and do so. I can say with certainty that it will probably go onto heavy menu rotation on your dinner menus!":

Chicken Gyros
2 boneless, skinless chicken breasts
4 cloves garlic, minced
1 lemon, juiced
2 tsp red wine vinegar
2 tbsp olive oil
2 tsp dried oregano
1 tsp all purpose greek seasoning
kosher salt and pepper
1 batch tzatziki sauce (see below)
sliced tomatoes
sliced onions
sliced cucumbers
lettuce
2 oz of crumbled feta
6 pitas
Tzatziki Sauce
1 (32 oz.) container of plain yogurt, strained for about 30 minutes
2 regular cucumbers, peeled, seeded, grated, and drained and squeezed
5 cloves garlic, grated
2 teaspoon red wine vinegar
2 teaspoon fresh lemon juice
1/2 teaspoon dried dill
1 tsp all purpose greek seasoning
1/2 tsp oregano
salt and a little pepper
drizzle of extra virgin olive oil (about 1/4 cup)

1. Slice chicken into strips. Combine first 7 ingredients into a zip top bag and marinate in the refrigerator for about 1 hour.
2. Slice your onions, tomatoes and dice the cucumber
3. Discard the marinade. Drain the chicken well and pat dry.
4. Heat a pan with a little olive oil to medium high heat. Grill the chicken for about 2-3 minutes per side or until golden brown and cooked. (If your chicken is thicker than 1/2 inch it may take 4-5 minutes per side)
4. Brush one side of the pita with olive oil and throw right on grate of your stove over the flame. just heat it up for about 1-2 minutes.
5. Serve the pita by drizzling some tzatziki on the inside of the pita, then top with chicken, tomato, onion, cucumber, feta, lettuce and a bit for more tzatziki.

White wine with this! Albarino would be a good choice!
