Lemony Shrimp Pasta with Blueberry Balsamic

Ingredients:
3 Giant Garlic cloves, sliced
1/2 cup parsley, chopped
1 lb. penne pasta
1.5 lbs of shrimp, raw
5 TBSP butter
5 TBSP olive oil
1/2 cup shredded parmesan
2 lemons, zest and juice
4 TBSP lemon infused olive oil
2 tsp of blueberry balsamic, over the top for garnish and freshness
1 tsp italian seasoning
1 tsp red pepper flakes
salt and pepper to taste

Directions:
1. Boil pasta according to directions. Drain, drizzle with a little olive oil and keep warm
2. Add butter and regular olive oil to a pan. Melt. 
3. Add shrimp to pan with seasonings and salt and pepper. Cook about 4 minutes and remove from pan with slotted spoon. 
4. Add garlic to the pan along with lemon oil, lemon juice and a little more salt and pepper
5. Saute for about 3-5 minutes. 
6. Add shrimp back to the pan, add the pasta and toss. 
7. Serve with a garnish of lemon zest, parmesan, and blueberry balsamic.
