Best Dry Rub for Ribs



I have tried many, many dry rubs. I had a feeling this one would be good, so I took the time to write it out exactly.  Here you go, a gift from the BBQ Gods.

2 Racks of Baby back Style Ribs

1/2 TBSP of the following:
Cinnamon
Cayenne

1 TBSP of the following:
Hungarian Paprika
Cumin
Salt
Chipotle Pepper

2 TBSP of the following:
Pepper
Brown Sugar
Oregano
McCormick Grill Mates Pork Rub
McCormick Grill Mates Applewood Rub

1 bottle of beer in a container that is open and that can sit on the grill.

Cooking Directions:
1. Combine the rub ingredients together. Dry the ribs with a paper towel and remove the silver skin from the back of the ribs. Cut the racks in half.
2. Use ALL of the rub for the ribs. Rub gently on both sides and on the ends.
3. Refrigerate for at least 4 hours and up to 12 hours. Take the ribs out of the refrigerator 1 hour before cooking so they come to room temperature.
4. Put some wood chips in a foil pack and place your foil pack on the left side of the grill under the grates.  Preheat the grill to 275 degrees (give or take). I have a 3 burner grill. I turn the left side high, the middle on low, and the right side is off.
5. Put the beer over the center burner.  This helps bring moisture in the smoke environment and you will stick your brush in the beer and lightly brush the ribs each time you open the lid to flip them.
6. Put the ribs on the right side of the grill. At 30 minutes flip, turn and brush. At 60 minutes, flip, turn brush. At 90 minutes, flip turn, brush.
7. Between 100-120 minutes, move the ribs over to the middle where the heat is on low.  Brush the ribs and close the lid.  You are finishing the ribs and caramelizing the outside.
8. Take the ribs off, cover with foil and let rest for 5-10 minutes. 
9. Using a sharp butchers knife, cut the ribs into individual bones and serve in a platter with your favorite BBQ sauce.

Note: I did use a little smoker box with Hickory chips on the left side of the grill.  Soak your wood chips in water for about 1 hour. Drain and wrap in foil.  Poke a few holes in the foil packet and place under the grill grate directly on the burner plate.
