Southwest Turkey Lettuce Wrap
Ingredients:
1 pound of lean ground turkey
1/2 jar of Trader Joe's Chipotle Black Bean paste
1 large shallot, diced
1 roma tomato, diced
2 cloves of garlic, minced
1 cup of shredded mexican cheese
1 Avocado, diced
1 lime
2 TBSP canola oil
1-2 TBSP taco seasoning
4 oz of sour cream
1/2 cup cilantro, chopped
1 tsp adobo sauce (from chipotles in adobo can)
1 large head of romaine lettuce, carefully washed to maintain perfect lettuce leaves
Your favorite salsa for topping (We had pineapple habanero and salsa verde)
Directions:
1. Combine tomato, garlic, and shallot in a small bowl. Mix and reserve
2. Mix the juice of 1/2 the lime, sour cream and adobo sauce. Reserve
3. Mix the juice from the other 1/2 of lime with the diced avocado, reserve
4. Heat a large pan with canola oil. Add the ground turkey and taco seasoning. Begin to break up and stir.
5. Cook over medium high heat for about 6 minutes. Add in the bean paste. Turn the heat down and toss a few times over about 4-6 minutes. Let meat cool a bit before assembling
6. Lay out the Romaine lettuce in a single layer. Start to assemble by adding the meat first, then salsa, cheese, avocado, tomato/garlic mix, sour cream, cilantro. Eat them up like tacos!
