One Pot Pork Chops and Brussell Sprouts


Ingredients:
5 bone in pork chops
1 pound of brussell sprouts
2 TBSP bacon fat
2 TBSP honey
3 TBSP canola oil
1/2 cup beef stock or water
1 tsp molasses bacon seasoning
1 tsp paprika
2 tsp pepper
2 tsp, plus a sprinkle more
1/2 tsp of cinnamon
2 tsp of pork seasoning (I used Country Head)
1.5 tsp of cumin

Directions:
1. Use 1 TBSP of canola oil to run pork chops. Season with 1 tsp pepper, pork seasoning, cumin and cinnamon. Sprinkle with salt
2. Preheat oven to 350
3. If your brussell sprouts are not too big, you can keep them whole. I find that they are quite large these days, so I like to slice them in half.
4. Since I have 5 pork chops today (I bought the value pack), I used 2 cast iron pots. Prepare each pot with 1 TBSP of bacon fat each.  Divide the brussell sprouts and then season with remaining salt, pepper, molasses and bacon seasoning, and paprika.
5. Cook on high for 4-5 minutes or until color starts to show. Remove brussel sprouts with a slotted spoon.
6. Deglaze the pan with beef stock or water if there are any brown bits. Let simmer and evaporate for 2 minutes.
7. Add in canola oil and your pork chops. Sear on side 1 for 4 minutes. Flip pork chops and then add brussel sprouts back to the pot.
8. Cook in the oven for 15-20 minutes.  If you think your pork chops are on the thicker side, you may need 20 minutes.
9. To serve, pull the pork chops out onto a plate and let rest for a few moments.  Toss the brussell sprouts in the pan to coat with all the drippings.  Drizzle with honey and serve.
