Sesame Ginger Chicken Wings




Ingredients:
2.5 pounds of chicken wings
8 oz of Sesame Ginger sauce (I used Fairway brand) See homemade recipe below for Asian wing sauce
ginger, ground, dry
chinese five spice
salt
pepper
cayenne
green onion
sesame seeds
Canola Oil

Directions:
1. Rub chicken with canola oil. Season liberally with salt, pepper, ginger, and chinese five spice. Toss them all around so the seasoning is everywhere. Let rest for about 30 minutes. 
2. Preheat grill to 275-300 degrees. Place chicken on the grill and close the lid.  Try not to touch for 15 minutes. Turn over once and let sit for another 15 minutes with the lid closed. 
3. By not moving them, the skin will stay in tact and you will get some nice color. 
4. Remove the chicken wings from the grill and cover with foil.  
5. If you are staying out on the grill, just make sure to use a grill proof pan or make a tray with thick foil. I moved inside to finish the wings since it got really dark out. 
6. Heat about 8 oz of the sesame ginger sauce in the pan until bubbly.  Add the wings.  Do not stir them for about 2-3 minutes.  Flip once and let sit again.  By letting them sit, you will get a little caramelization from the sugars in the sauce. 
Note: If you are making your own sauce, put the wings into an oven safe pan off the grill. Pour your sauce over the wings and toss. Place in the oven and turn on to 350. the wings will be in there as the oven heats up and just as soon as it hits 350, leave it on for 5 minutes and then they are ready. Today I made the wings at 7pm and didnt eat until 8:30. So I kept them in the oven to stay warm and then just before ready to eat I heated up the oven. 
7. Serve on a platter. Garnish with sesame seeds and green onions.  

I purchased the frozen Gyoza from Trader Joes to have with this. Just pan fry them in about 2 TBSP of canola oil for 5 minutes.  Add 2 TBSP water to the pan, reduce heat to medium low and cover for 5 minutes. Serve with a little extra sauce on the side.  

Homemade Asian Wing Sauce:
1/4 cup chicken stock
1 tsp minced garlic
1 tsp minced ginger
1/2 cup thai Chili Sauce
3 TBSP Hoisin Sauce
3 TBSP Soy Sauce
salt
pepper
1 TBSP Siracha
1 TBSP Orange Marmalade
