Braised Short Ribs


Ingredients:
10 Prime beef Short Ribs
2 cups of red wine
4 cups of beef broth
2 TBSP flour
1 onion, diced
6 cloves of garlic, smashed
2 shallots, diced
1 TBSP tomato paste
bouquet of thyme and rosemary, plus 1 tsp of each chopped
2 TBSP canola oil
Seasoning: season salt, fresh cracked black pepper, Trader Joes BBQ Coffee Rub

Directions:
1. Dust the short ribs in the flour
2. Preheat large braiser pot or dutch oven to medium high heat with canola oil.
3. When hot, add in your short ribs and sear on all 4 sides for 4 minutes each.
4. While that is happening, chop your onions and smash your garlic
5. Remove the short ribs from the pan. Preheat oven to 350.
6. Add in your onions and garlic to the pan with about 5 dashes of each seasoning
7. Cook for about 5-7 minutes or until softened
8. Add the wine and 3 cups of beef broth. Simmer for about 5 minutes.
9. Add your short ribs back in, add in your bouquet of herbs and season with a little more pepper and BBQ rub.
10. Cover your pan with a tight lid or foil and cook for an hour, covered
11. Loosen the cover or poke holes in the foil and cook for another hour
12. For the last 30 minutes, uncover the pot and some of the liquid will reduce even more making a nice glaze.
13. Remove the short ribs from the oven and let rest for 5-10 minutes. Serve over polenta or mashed potatoes and a side of asparagus.
