Grilled Romaine Salad with "Brushetta" dressing

Ingredients:
2 hearts of romaine, rinsed and kept together
1/2 cup mozzarella cheese, for sprinkling over top (optional)
1 large roma tomato, diced
1/2 red onion, diced
2 garlic cloves, minced
2 TBSP parsley, chopped
1 TBSP basil, chopped
1/2 lemon, squeezed
2-4 TBSP balsamic
2-4 TBSP olive oil
salt and pepper

Directions:
1. Combine all ingredients, except for lettuce in a bowl up to 4 hours in advance.
2. Preheat grill to medium high heat.
3. Grill lettuce for 3- minutes on 2 sides. Remove from grill and top with dressing and mozzarella cheese and enjoy!
