Barbacoa Tacos


Ingredients:
3 pound beef chuck roast
Spice rub:
-1 tsp salt
-1 tsp pepper
-1 tsp oregano
-1tsp ancho chili powder
-1 tsp cumin
-1 tsp onion powder
-1/2 tsp cayenne
Liquid for slow cooker, put this all in a blender and then pour in slow cooker
-2 cups beef stock
-1 jalepeno
-1 handful of cilantro
-1 shallot
-2 TBSP apple cider vinegar
-3 chipotles
-2 TBSP adobo (from chipotles can)
-5 cloves of garlic
Garnish for Tacos
-white onion
-cilantro
-green onion
-your favorite hot or tomatillo salsa

Directions:
1. Run the meat and let sit for at least 30 minutes or overnight.
2. Blend your liquid in a blender and pour in slow cooker. Add the meat, cover and cook for 8 hours on high.
3. Shred the meat gently with 2 forks.
4. Chop your white onion, cilantro and green onion for garnish.
5. Warm your tortillas and serve.

This was great with a Chilean Cabernet Sauvignon
