Hawaiian Pork Sliders



Ingredients:
8 oz of Havarti cheese, sliced
1/2 of a pineapple, sliced
1/2 pound bacon, fried
Jar of Mini Dill pickles for garnish
1 (2 pound) pork loin roast (if possible with some smoky or mesquite marinade)
18 mini Hawaiian rolls
Kings Hawaiian BBQ Sauce (sweet and smoky)
Optional - 1 cup of beef stock

Directions"
1. Preheat oven to 375.
2. If pork is already marinated, run lightly with BBQ seasoning and drizzle some liquid smoke on it. If it is not already marinated, heavily season and maybe even rub with a little BBQ sauce.
3. Place the pork loin in a shallow baking dish with a little water or beef stock. Roast for 30 minutes at 375 or until temperature gets to 150 degrees.  Cover and let rest for 5-10 minutes before slicing into slider size pieces.  Make sure not to cut too thick as the meat and can get tough.
4. To assemble your slider, put the cheese on the bottom, then the pork, then the pineapple, bacon, bbq sauce and top it off with the bun and skewer through the top with a pickle on the outside.

I didn't have wine with this recipe, but I did have an Amstel Light beer which went great!
