One Pan Chicken Souvlaki



Ingredients for Tzatziki:
16 oz. Plan Greek Yogurt
1/4 of a lemon, squeezed
1 TBSP mint, minced
1 TBSP parsley, minced
2 tsp garlic, minced
salt and pepper
1/4 tsp all purpose greek seasoning
pinch of red pepper flakes
1/2 of a small cucumber, seeded, peeled, and minced
1 TBSP red wine vinegar

Ingredients for Sheet pan:
1 red onion, thinly sliced in half moons
1 pint of cherry tomatoes, halved
3 Chicken breasts, cut into cube pieces
1 tsp garlic powder
1 tsp all purpose greek seasoning
1 tsp oregano
1 tsp italian seasoning
1/2 tsp red pepper flakes
1 tsp pepper
1 tsp salt
10-15 dashes of Worcestershire sauce
1/4 cup of olive oil

You will need 4-6 pitas to cut up and serve with this!
Sprinkle with parsley for garnish

Directions:
1. Combine all ingredients for your greek yogurt, mix well and refrigerate for at least 30 minutes.
2. Preheat your oven to 350 degrees with the sheet pan in the oven.
3. Toss all of your sheet pan ingredients together in a large bowl. Mix well, but gently.
4. Take the pan out of the oven and toss all of the chicken mixture ingredients on the pan in a nice even layer.
5. Bake at 350 for 20 minutes.
6. Cut the pitas into large triangle pieces
7. Take the chicken out of the oven, toss and move towards the center of the pan. Arrange the pita chips around the edges of the pan and put the whole tray back in the oven for 10 minutes.
8. Sprinkle with parsley for garnish, if desired.

No wine for me tonight, but this would go really well with a Verdejo or Chenin Blanc.
