Fried Pickles - Copycat Texas Roadhouse recipe
Ingredients:
1 cup canola oil
2 cups peanut oil
Dipping Sauce:
1 TBSP ketchup
1 TBSP horseradish
1/4 cup mayo
1/2 tsp cajun seasoning
Pickles:
2 cups dill pickle chips
1/2 cup flour
1 tsp cajun seasoning
1/4 tsp cayenne
1/4 tsp oregeno
1/4 tsp pepper
1/4 tsp salt
Directions:
1. Set up 3 pie dishes or bowl for your pickle station. First one has a paper towel in it and you want to place your drained pickles in that one for about 30 minutes to dry out. The second one is your flour mixture with the seasonings. The third one is clean with just a few paper towels so you can put the pickles in there to drain after you take them out of the oil.
2. After pickles have dried for about 30 minutes, toss them in the flour mixture with two big forks. Make sure they don't stick together and flour is coated on all side of the pickle.
3. Heat your oil up to about 375 - or until oil is hot when you put your hand over the top. If you put the first pickle in and the oil doesn't bubble and start frying the pickle, your oil isn't hot enough yet.
4. Use a spider or spoon with holes in in to move the pickles around and flip them after about a minute. 1-2 more minutes and they should be done. They wont turn dark brown but you will see some browning on the tops. Drain on paper towel and serve right away with dipping sauce.
