Baked Three Cheese Mac and Cheese - with Chorizo Topping


Ingredients:
1 pound box of large pasta shells
4 TBSP butter
1 pint of heavy cream
4 cups mild cheddar, shredded (plus a handful more for topping)
6 oz (about 3/4 bag) of shredded mexican cheese blend (should contain monterray jack)
8 oz block of smoked gouda cheese, shredded
2-3 tsp of garlic powder
2-3 tsp of paprika
2-3 tsp of pepper
2-3 tsp salt
4 links of chorizo, removed from casing, cooked and broken up in a pan. Reserve



Directions:
1. Preheat oven to 350 degrees.
2. Boil pasta according to pacakge directions to al dente
3. Drain pasta and immediately add in the cream, butter, cheeses and seasoning. Start with 2 tsp of each seasoning and taste to see if it meets your preference.
4. Once the ingredients are combined, pour the mac and cheese in a buttered 9x13 pan. Sprinkle with chorizo and put in the oven for 30 minutes. 
5. At 30 minutes, sprinkle the additional handful of cheddar over the top and put under the broiler for 5 minutes to brown the top a bit more.
6. Let cool slightly and serve!
