Chopped Salad - Inspired by Portillo's



Ingredients for dressing:
1 cup olive oil
1/2 cup balsamic vinegar
3 garlic cloves, minced
2 tsp sugar
1 tsp oregano
large pinch of salt
black pepper to taste

Ingredients for salad:
3/4 pound of bacon, fried and broken up
3/4 pound of chicken lunchmeat (I used the smoked chipotle chicken from boars head)
2 hearts of romaine, chopped
1/2 cup of green onions
2 tomatoes, chopped (or use cherry tomatoes, halved)
1 cup of gorgonzola cheese or some other crumbly goat cheese of your choice. You could also sub mozzarella for a milder flavor (we like that)
1/2 cup chopped almonds
1 small cucumber, seeded and diced
1/2 box of medium pasta shells, prepared according to directions and cooled.
1/2 cup pepperoncini peppers, sliced

Toss all ingredients together and drizzle with dressing.
